In The Kitchen


I had good intentions of not baking until closer to Christmas but, after a week of bad weather and cabin-fever from being unable to get outdoors for fresh air, my good intentions wavered and I baked some biscuits.  These are toffee biscuits from The Scandi Kitchen by Bronte Aurell and very good they were too.  

Not to feel too guilty about indulging in a sweet treat, I doubled the recipe and put two packages of dough in the freezer for future use. 

Anyone care to join me for tea and toffee biscuits?

  1. Sometimes, in spite of good intention, we just have to bake to cheer up... LOL! Biscuits are great to make at such time, and freezer some for later... for those moments of weakness! ;) These toffee biscuits look very delicious, a bit like peanut butter cookies! ...mmm... VERY much wish I could stop in for a cuppa, a biscuit and a good chin wag! ((HUGS))

  2. Blimey Marie, you've certainly got your blogging mojo back and it's lovely to see. I think that if it's so cold that you can't go outside you definitely need extra carbs to keep your energy levels up, so these biscuits are practically essential! They look delicious. x

    1. Ah, it seems that you aren’t aware that NaBloPoMo was National Blog Posting Month, which ran for a few years and now I do as a personal challenge. I have to post every day for a month - almost there! Marie x

  3. They sound amazing. Toffee anything goes down a storm with me. How clever of you to divide your dough and freeze batches for later. I'd have just ended up with more biscuits than I could ever have fitted in my biscuit tin, which would presented me with a dilemma that could only have been solved with an enormous biscuit binge 🤪 Bonny xox
